Die Markthallen von Béziers wurden 1891 im Baltard-Stil erbaut. Ein Jahrhundert später, im Jahr 1987, wurden sie vollständig renoviert. Heute sind sie in das Zusatzinventar der historischen Denkmäler eingetragen.
Im Mittelalter befand sich an der Stelle der Markthallen die Kirche Saint-Félix (romanisch). Hier übergab der Vicomte von Béziers, Raymond II. Trencavel, am 7. April 1247 nach einem letzten Aufbäumen gegen die Macht des französischen Königs seine Vicomté in die Hände von Saint-Louis.
Die Kirche wurde 1815 abgerissen und der Ort wurde zu einem Friedhof für Bedürftige. Bis zu den "großen Haussmannschen Arbeiten" des 19. Jahrhunderts, die vom Bürgermeister Alphonse Mas gewollt wurden. Und so wurden die Hallen von Béizrs eröffnet. Heute beherbergen sie 21 Stände von lokalen Händlern und Produzenten, die jeden Tag die Einwohner anlocken.
