Le Halles de Béziers, in stile baltardo, risalgono al 1891 e sono state completamente rinnovate nel 1987 e nel 2024. Oggi sono iscritte nell'Inventario supplementare dei monumenti storici e sono state elette "Mercato più bello di Francia" nel 2025!
Nel Medioevo ospitava la chiesa romanica di Saint-Félix, dove nel 1247 il visconte Raimondo II Trencavel cedette la sua viscontea a Saint-Louis. La chiesa scomparve nel 1815, per lasciare il posto a un cimitero per indigenti, fino a quando i grandi lavori del XIX secolo, guidati dal sindaco Alphonse Mas, diedero vita alle halles che conosciamo oggi.
Oggi, più di venti bancarelle di commercianti e produttori locali animano il mercato ogni giorno, attirando abitanti e visitatori per un'esperienza deliziosa e conviviale a Béziers!
