Die Poststation stammt aus dem 18. Jahrhundert und die Familie Tellechea verwöhnt die Einwohner von Bayonnais seit einem halben Jahrhundert. Die Treue des Cheval Blanc ist also eine dauerhafte Tugend und Jean-Claude, der dreißig Jahre am Herd steht, weiß, wovon er spricht, wenn es um Schinken oder Seehecht geht. In seinen drei hellen Sälen lässt er sich nicht auf die Region ein und legt Wert auf Identität auf dem Teller und in der Atmosphäre: Parmentier vom Xamango mit getrüffeltem Kalbsjus, Seehecht mit Maisbohnenmayonnaise aus dem Béarn, warmes Soufflé mit Grand-Marnier
