Posthuset stammer fra det 18. århundrede, og familien Tellechea har i en halv århundrede serviceret indbyggerne i Bayonne. Troskaben ved Cheval Blanc er derfor en vedvarende dyder, og Jean-Claude, der har lavet mad i tredive år, ved, hvad han taler om, når det gælder skinke eller hvilling. Med sine tre lyse sale hviler han ikke på laurbærrene og foretrækker identitet, både på tallerkenen og i atmosfæren: Xamango Parmentier med trøffelsauce, hvilling med béarneske majones med majsbønner, varm soufflé med Grand Marnier.
