Dieses Vorzeigeprodukt des Baskenlandes wird in einer dreieckigen Form neu interpretiert, die von den baskischen Bergen inspiriert ist. Sein Rezept für den traditionellen Teig aus Herriko (Weizen) und Arto Goria (roter Mais), das er von seinem Aitatxi (Großvater), einem ehemaligen Bäcker, geerbt hat, wird verbessert, um knusprig und weich zu werden.
