In the Pajotse village of Elingen the construction of a vineyard has started. "Dappersveld" is the name of the wine estate, after the hamlet of the same name in Elingen. The De Zwarte Molen stud farm at Zwarte Molenstraat 66, located in an old square farm dating from 1788, will also house the activities of the Dappersveld wine estate.
The first vines were planted. A start was made with a small hectare. Carlo Faber from Luxembourg got the job done, planting the first 4,250 vines took about half a day. The following Vitis Vinifera varieties have been chosen: Chardonnay, Pinot Gris, Auxerrois and Pinot Noir. So no hybrids.
The way of working is based on 'Bio en lutte raisonnée' (permitted control), a biological way of working but still with economic objectives.
Eric Geyssens: «We have completely rejected the use of herbicides, all other treatment methods are done in consultation with the organization PC'fruit. It notifies you when the disease pressure becomes too great.»
Linda Lefever: «The first harvest is expected in 2015. The ultimate goal is a quality yield and obtaining a good wine. The vinification, the making of the wine, will also be done with us. We realize that viticulture is very labour-intensive, but for our new profession, sacrifices have to be made, which is done passionately in this context."
