Description

1875: In the inheritance of Joannes Ferdinandus Cammaert, renter and mayor of Huizingen, a property is described consisting of an inn, 'De Chik', with a beer warehouse, a stable, two residences, and other appurtenances, located on the Sollenberg. In the same deed, the distribution of movable goods is also described, including the equipment of the brewery and the beer. This clearly proves the brewing activities of that time. His grandson, Jan-Baptist (°August 18, 1880) was a brewer and innkeeper, together with his younger brother Georges (°June 29, 1894). After the death of their father in January 1922, the brothers continued the brewery activities together.

The brewery experienced increasing activity from 1922 to 1948. There were about six permanent employees at that time (one brewer and two brewing assistants, one cooper and two teamsters). Interestingly, the brewing water at that time came from a spring located at the higher Sollenerf. This water was diverted via a siphon to a large tub in the attic of the brewery. This way, a constant pressure could be maintained in the water supply. During the winter months from October to March, brewing took place on average three times a week.

Later, due to the growing success of the brewery, the flow rate of the spring became insufficient and an additional water well was drilled. Jan-Baptist Eylenbosch passed away in 1948 and was succeeded by his second youngest son Henri. Henri modernized the brewery and produced gueuze, which was marketed in 25 cl bottles with crown caps. A significant portion of the production was exported to Wallonia. Henri ceased brewing around 1965.
