Jersbek was first mentioned in a document in 1310 as the village of Yrekesbeke. The place is known far beyond the borders of Stormarn for its estate, which includes the manor house built in 1620, the gatehouse from 1678, and the ice cellar probably built in 1736/1737.
In 1588, the Jersbek estate was separated from the ancestral estate of Borstel by inheritance contract and became an independent estate under Hans von Buchwaldt. The Renaissance manor house, located on an island, is a typical Holstein structure, consisting of a duplex with gabled roofs, a tower-like extension, and later added side wings. The gatehouse is topped by a cupola.
