Did you know that a sauce was named after this lake. Auguste Escoffier, the founder of French classical cuisine, already described the Albufera sauce. The sauce is a reduced poultry stock, enriched with paprika butter, cream, foie gras and a splash of liquor. The link to this lake is through a general under Napoleon. He was called the Duke of Albufera because he won a battle here against the English. And as a tribute to him, the sauce got his name, and thus indirectly also from this lake.
