The village of Collioure lived on selling wine and salted fish, more specifically anchovy.
The wine was called Banyuls, and has a dark spicy sweetness, which is perfect for a combination with salty anchovy.
What's very peculiar is that this village was untouched by the bubonic plague when it swept through Europe and killed more than 75 million people. It is believed that this is related to the salt which was stored in the village for the prepration of the anchovy.
The anchovy of Collioure is considered the best salted anchovy sinte the Middle Ages. In the Middel Ages, the village was also very well known for the salted tuna and sardines.
