It's been almost 30 years since winemakers rediscovered the knowledge and flavor of this sweet wine, around Queyssac, Meyssac and Beaulieu-sur-Dordogne. Vin de Paille de Corrèze, which was awarded AOC status in 2017, is produced from red grapes (Cabernet Franc and Cabernet Sauvignon) or white grapes (Chardonnay, Sauvignon). The best bunches are harvested by hand. The bunches are placed on racks and left to dry in airy rooms. As Christmas approaches, the grapes are pressed, and the wine is aged for at least 2 years, then bottled. Miel des Muses" is served as an aperitif, but also accompanies foie gras, cheeses and desserts.
