A knights tour and a castle: Canterbury Castle

This route is certainly not flat. There is little (no) chance you will be seeing cars along this route. This route is paved and suitable for a race bike. You can start this route everywhere, but this castle (Canterbury Castle) is certainly a good place to start. A nice break during this route is a visit to the museum (Canterbury Heritage Museum). You'll pass Greyfriars Lodge (hotel) along this route. You can start your tour there (or somewhere else). Certainly stop at Westgate before getting on the road again. You will certainly be charmed by this route. No need to worry. Not many places to stop for a drink along this route, but there are some.
