The oyster pits have been used for centuries by shellfish farmers in Yerseke. They are a kind of large concrete containers in which Oosterschelde water can be let in. The oyster pits and sheds around them date from 1873.
There are plots with oysters and mussels in the Oostschelde. The oysters are then stored in the oyster pits and cleaned of sand and silt in an innovative way.
After they have been harvested in the Oosterschelde, the oysters are cleaned and sorted according to size . They come to rest in the oyster pits where they spew out the sand they received during harvesting and cleaning.
