A lo largo del camino Enkelenberg, puedes oler la fragancia del Fruto del Saúco en mayo y junio. En ese período, la planta está en flor. La madera del saúco es blanda, pero no astillosa. Por eso, en el pasado fue muy popular hacer pequeños utensilios de ella. Las flores se utilizan en tortitas. Los nativos americanos fritan las flores. Además, se puede hacer jarabe de las flores. Este se produce principalmente en Inglaterra y se conoce como Elderflower Cordial. En Suecia se conoce como Fläderblomssaft. Las flores secas se pueden utilizar durante todo el año para hacer té.
