La empresa fue fundada en 1896 por Antoine Jacques en Verviers. En colaboración con un fabricante local de chocolate, empleó a unas cuarenta personas en su fábrica. En 1920 fundó la NV Jacques Chocolaterie y en 1923 la fábrica de chocolate se trasladó a Eupen. Antoine Jacques obtuvo en 1936 una patente sobre la famosa barra de chocolate. Con ello, la empresa se declara inventor de la barra de chocolate.
En su apogeo, a mediados del siglo veinte, trabajaban unas 250 personas para la empresa. En 1982, Jacques fue incorporada al grupo alemán Stollwerck-Sprengel. En 1987 se puso en funcionamiento una nueva fábrica para poder satisfacer la creciente demanda. En 1994 se amplió esta fábrica, ocupando la infraestructura un total de 31.400 m², y se inauguró el Schokoladenmuseum Jacques junto a la fábrica. En 2002, el grupo Stollwerck fue vendido a Barry Callebaut, que a su vez lo vendió en 2011 a Baronie.
