Desde 1867, cuatro generaciones se han sucedido en viñedos de renombre.
Además de sus perlas espumosas, la familia DEFRANCE tiene desde hace tiempo el privilegio y el arte de vinificar el famoso Vin Rosé des Riceys. La finca se compone principalmente de uvas Pinot Noir y Chardonnay.

Christophe Defrance, en colaboración con su esposa Marie-Dominique desde hace veinte años, y más recientemente con su hija Anne-Sophie, han desarrollado sus prácticas vitícolas para extraer toda la riqueza de la tierra a la que pertenecen, respetando la naturaleza y el terruño (eliminación de todos los insumos: insecticidas, antibotrytis, herbicidas).

En la actualidad, todo el suelo se cultiva mecánicamente.
Champagne Jacques DEFRANCE está certificado Terra Vitis y H.V.E III.
