Sinds 1867 hebben vier generaties elkaar opgevolgd op gerenommeerde wijngaarden.
Naast de mousserende parels heeft de familie DEFRANCE al lang het voorrecht en de kunst van het vinifiëren van de beroemde Vin Rosé des Riceys. Het domein bestaat voornamelijk uit Pinot Noir en Chardonnay druiven.

Christophe Defrance, in samenwerking met zijn vrouw Marie-Dominique gedurende de laatste twintig jaar, en meer recent met zijn dochter Anne-Sophie, hebben hun wijnbouwpraktijken ontwikkeld om alle rijkdom te halen uit de grond waartoe ze behoren, met respect voor de natuur en het terroir (eliminatie van alle inputs: insecticiden, anti-botrytis, herbiciden).

Tegenwoordig wordt alle grond mechanisch bewerkt.
Champagne Jacques DEFRANCE is Terra Vitis en H.V.E III gecertificeerd.
