El restaurante Patxamama, en el barrio de Grand Bayonne, es el lugar que hay que descubrir, dirigido por el chef Nicolas Bouchard y su compañera Lise. Nicolas se formó en París, pasando por la escuela Ferrandi, la casa Dutournier, abriendo uno de los restaurantes de Guy Martin, ocupando varios puestos en Le Meurice durante 2 años, luego 3 años con Yannick Alléno antes de dejarlo todo para viajar por América Latina... y fue allí donde encontró la inspiración para su restaurante Patxamama. Ni que decir tiene que Sudamérica ha influido mucho en su cocina. Es cocina de bistrot con influencias viajeras. Nicolas trabaja con productos locales frescos y concede gran importancia a la selección de sus productores.
