Il ristorante Patxamama, nel quartiere Grand Bayonne, è il luogo da scoprire, gestito dallo chef Nicolas Bouchard e dalla sua compagna Lise. Nicolas si è formato a Parigi, passando per la scuola Ferrandi, la casa Dutournier, aprendo uno dei ristoranti di Guy Martin, ricoprendo diversi incarichi presso Le Meurice per 2 anni, poi 3 anni con Yannick Alléno prima di abbandonare tutto per viaggiare in America Latina... ed è lì che ha trovato l'ispirazione per il suo ristorante Patxamama. Va da sé che il Sud America ha avuto un'enorme influenza sulla sua cucina. È una cucina da bistrot con un'influenza da viaggio. Nicolas lavora con prodotti freschi locali e attribuisce grande importanza alla selezione dei suoi produttori.
