El priorato está abierto a los visitantes durante los actos y las Jornadas Europeas del Patrimonio.
En 1262, San Luis fundó el priorato de San Mauricio, dentro del perímetro del castillo real, para albergar las reliquias de veinticuatro mártires de la Legión Tebana, compañeros de San Mauricio. Del complejo monástico se conserva el ala oriental del priorato de San Mauricio, que fue remodelada hasta el siglo XIX y en cuyo piso superior se ha restaurado el dormitorio de los monjes. Durante su visita, descubrirá el asombroso techo de madera del "casco de barco al revés".
