La brasserie a été fondée en 1998 par l’ingénieur brasseur Pierre Delcoigne sous le nom de Brasserie des Géants. En 2007, la Brasserie Ellezelloise, fondée en 1993, est reprise. Le nom a ensuite été changé en Brasserie des Légendes. Les activités brassicoles sont actuellement toujours réparties entre les deux sites.
Bières (Brasserie des Géants) :
- Gouyasse Tradition (aussi connue sous le nom de Goliath Blonde) : blonde, 6% d’alcool
- Gouyasse Triple (également connu sous le nom de Goliath Triple) : tripel, 9% d’alcool
- Saison Voisin : saison, couleur ambrée, 5% d’alcool
- Ourson : foncé, 7,5% d’alcool
- Ducassis : bière fruitée, 3% d’alcool
