Le cœur de la Brasserie Historique est l'installation de brassage de l'ancienne brasserie des Carmes datant de 1352 à Bad Neustadt an der Saale, la cinquième plus ancienne brasserie d'Allemagne. Dans les murs en cuivre de la cuve de brassage, la brasserie se reflète dans la lumière chaude.
