La Nougatine fut inventée il y a plus d'un siècle par Jean-Louis Bourumeau.
Sa création connut le succès grâce à l'Impératrice Eugénie. Ayant découvert le bonbon lors d'une visite officielle à Nevers avec son mari l'Empereur Napoléon III, elle le trouva si délicieux qu'elle passa commande en grande quantité à son retour et fit connaître la Nougatine au Tout-Paris.
La pâtisserie chocolaterie Édée, dépositaire du secret de M. Bourumeau, maintient aujourd'hui encore, la tradition de la véritable Nougatine.
