Les gaufres de La Flotje, du surnom donné à la fondatrice Florence Carton par sa grand-mère, sont fabriquées à Sainte-Marie Cappel. En plein cœur du pays Flamand, la "petite flo", avec l'aide de son mari ancien pâtissier, produit des gaufres avec cinq parfums : trois classiques (rhum, vergeoise et vanille) et deux qui varient selon les saisons; Ses gaufres ont fait partie des finalistes pour le prix de la Meilleure gaufre 2021.
