Il nome Gold Ochsen è menzionato per la prima volta a Ulm nel 1499. Nel 1597, il locandiere Gabriel Mayer fondò la birreria e locanda Zum Goldenen Ochsen nel centro storico di Ulm. Negli anni successivi, l'azienda subì numerosi cambiamenti di proprietà.
Nel 1812, la birreria fu acquistata dal birraio e leader di gilda Jakob Wieland. Nel 1867, suo figlio vendette la birreria alla famiglia Leibinger, che detiene la proprietà fino ad oggi. La birreria fu trasferita in un nuovo edificio al margine settentrionale della città. A causa del bombardamento di Ulm durante la Seconda Guerra Mondiale, la birreria subì solo danni leggeri, sebbene l'81% del centro città fosse stato distrutto.
