Si preparano menù a base di specialità dei Paesi Baschi. La maggior parte degli ingredienti utilizzati sono locali, il che garantisce la freschezza e la qualità dei piatti proposti. Ad esempio, l'agnello è allevato nella fattoria di famiglia, le trote provengono dal villaggio di Ahaxe e il formaggio di pecora è stagionato da produttori locali. La locanda vi preparerà un piatto locale per farvi assaporare i ricchi sapori della regione. È possibile affittare il ristorante per banchetti.
