La Ferme des Joncs, situata a Saint Phal, è un luogo ricco di storia. Su 10 ettari di terreno circondati da prati e acqua, questo casale era il vecchio mulino del villaggio. Sébastien Patient, proprietario dei locali dal 2018, possiede molti animali: capre, conigli, galline, oche, cavalli, cani e faraone. Allevatore di formaggi, offre tutta la gamma dei prodotti dell'azienda: latticini di latte di capra (formaggio, faisselle, yogurt), uova e pollame. In loco troverete anche una gastronomia di prodotti locali. La boutique è aperta dal mercoledì alla domenica dalle 17:00 alle 19:00. La Ferme des Joncs è presente nei mercati di Sainte Savine, Troyes e Aix-en-Othe (mercoledì).
