La Ferme des Joncs, en Saint Phal, es un lugar cargado de historia. Situada en un terreno de 10 hectáreas rodeado de prados y agua, esta granja solía ser el antiguo molino del pueblo. Sébastien Patient, propietario desde 2018, tiene muchos animales: cabras, conejos, gallinas, ocas, caballos, perros y pintadas. Quesero, ofrece toda una gama de productos de granja: productos lácteos a base de leche de cabra (queso, faisselle, yogur), huevos y aves de corral. También encontrará una tienda de delicatessen con productos locales. La tienda abre de miércoles a domingo de 17:00 a 19:00 h. La Ferme des Joncs está presente en los mercados de Sainte Savine, Troyes y Aix-en-Othe (los miércoles).
