Il letame della palude veniva utilizzato come fertilizzante per i vigneti di La Foye-Monjault, prima della crisi della fillossera.
I vigneti erano talvolta lontani dalle case. La manutenzione del vigneto richiedeva molte giornate di lavoro con un grande personale e attrezzature. Era quindi pratico poter mangiare sul posto, o addirittura cucinare, da qui la costruzione di piccole case chiamate "cantine", dapprima arredate sommariamente, poi più confortevoli (camino in pietra, cantina con scala in pietra, cisterna, meridiana sulla facciata).
Alcuni di essi sono stati restaurati nei primi anni 2000.
