Der Mist aus dem Sumpf diente vor der Reblauskrise als Dünger für die Weinberge von La Foye-Monjault.
Die Weinberge lagen manchmal weit von den Wohnhäusern entfernt. Die Pflege der Weinberge erforderte viele Arbeitstage mit viel Personal und Material. Es war daher praktisch, vor Ort essen oder sogar kochen zu können. Daher wurden sogenannte "Kantinen"-Häuschen gebaut, die zunächst nur notdürftig möbliert waren und später komfortabler wurden (Kamin aus Quadersteinen, Keller mit Steintreppe, Zisterne, Sonnenuhr an der Fassade).
Einige wurden Anfang der 2000er Jahre restauriert.
