El estiércol del pantano servía de abono al viñedo de la Foye-Monjault, antes de la crisis de la filoxera.
Los viñedos estaban a veces alejados de las casas residenciales. El mantenimiento de la viña requería muchas jornadas de trabajo con un personal consecuente y material. Por lo tanto, era conveniente poder comer en el lugar, incluso cocinar, de ahí la construcción de las casitas llamadas "cantinas" primero sumariamente amuebladas, luego más cómodas (chimenea de piedra tallada, bodega con escalera de piedra, cisterna, reloj de sol en la fachada).
Algunas fueron restauradas a principios de la década de 2000.
