L'evento turistico più grande di Castel del Monte è La Notte delle Streghe, un evento annuale per il quale il paese è molto conosciuto. Si tiene a metà agosto, migliaia di persone visitano il paese per lo spettacolo notturno in cui l'intero centro storico funge da palcoscenico per i residenti che interpretano i ruoli di cittadini e streghe in un dramma folcloristico nel dialetto locale conosciuto come "Castellano".
