Pascal Moustirats, geboren in Bayonne en leerling patissier in het huis Heynard, vlakbij de kathedraal, ging "omhoog" naar Parijs om een chocoladeopleiding te volgen in het Maison du Chocolat van Robert Linxe. Dit was het begin van een prachtige carrière die werd voortgezet bij Pierre Hermé, Ladurée en vervolgens Jacques Genin, waar hij bonbons maakte voor gasten en sterrenrestaurants, met name Alain Ducasse, Alain Dutournier's Carré des Feuillants, de Crillon en de Tour d'Argent. Terug in Baskenland na tien jaar Parijs, werd in 2008 Chocolat Pascal opgericht. De chocolatier biedt ons allerlei soorten bonbons om te crunchen, chocoladerepen van mengsels van grote jaargangen of pure jaargangen, maar ook een assortiment chocoladebonbons, ganaches en pralines, die in 2015 een prijs kregen op de Salon du Chocolat in Parijs.
