Het restaurant is gelegen in de Corbières, in het hart van het oude dorp Fabrezan, in een oude gerenoveerde fourniturenwinkel. Olivier Legras gebruikt lokale producten, met het label Pays Cathare, voor zeer lokale menu's, versterkt door de ongeveer vijftig referenties van lokale wijnen. Er zal een ruime keuze aan regionale wijnen worden aangeboden.
