Restaurant Darwin wil zich graag toeleggen op fine dining: het op het bord brengen van verfijnde gerechten die tevens een lust voor het oog zijn. Bij een mooi gerecht hoort een wijn die de zinnen streelt. De wijnkaart is in ontwikkeling zodat optimale combinaties tussen spijs en drank kunnen ontstaan.
De chef, Jasper van de Vin, werkt dagelijks aan de verfijning van hetgeen hij op tafel zet. Zoals het een jong kooktalent betaamt. Het vertrekpunt van zijn kookkunst is de wereldkeuken, geen vastomlijnd idee over hoe het ideale gerecht smaakt maar inspiratie vanuit alle uithoeken. Darwins journey.
Restaurant - Darwin is gevestigd in de prachtige hoeve Overste Douvenrade in Heerlen. De hoeve ligt op het Heerlense landgoed Terworm en het restaurant dus ook.
