Groppendorf blev nævnt første gang i 1112 som Grippendorf. I 1910 boede der 209 mennesker i landsbyen Groppendorf og 74 i godset Groppendorf. Den 30. september 1928 blev godset Groppendorf sammenlagt med landsbyen Groppendorf. I 1933 blev den frivillige brandvæsen, som stadig eksisterer i dag, grundlagt i byen. Den 1. juli 1950 blev Groppendorf indlemmet i Hakenstedt. Den 1. januar 2010 blev det indlemmet i Erxleben.
I byen står Sankt Marienkirke, som stammer fra det tidlige 13. århundrede. Andre fredede bygninger er gården på Dorfstraße 7 og den Veltheimske godsgård på Dorfstraße 13, 15, som tilhørte familien von Veltheim på Slot Harbke.
