Die Moulin du Saut verdankt ihren Namen ihrer strategischen Lage am Fluss. Sie wurde an der schmalsten Stelle des Tals (7 m breit) an einer Felswand errichtet und überragt einen 10 m hohen Wasserfall oder "Sprung". Dank der Anpassung des Gebäudes an das Flussbett des Alzou besitzt das Wasser hier die nötige Kraft, um die vier Mühlsteinpaare der Mühle anzutreiben.
Das in den Türsturz eingravierte Datum 1739 steht für die Fertigstellung der Mühle durch den Herrn von Gramat. In den drei Wasserkammern der Mühle wird Getreide gemahlen. Im Obergeschoss befinden sich die Wohnräume mit Latrinen und einem Kamin. Eine Trinkwasserquelle, ein Brotofen und ein Stall vervollständigen das Ensemble und sorgen für die Selbstversorgung der Mühle
