En el Mercado de Biervliet encontrarás la estatua de la figura más importante de la historia de Biervliet: Willem Beukelszoon, quien en 1397 ideó el método de despiece de arenque, una forma especial de limpiar el pescado. En el despiece, se retiran las branquias y los intestinos del arenque con un cuchillo especial, excepto el páncreas. Las enzimas del páncreas permiten que el arenque 'madure'.
