Quercus coccifera oder Kermes-Eiche ist der dominierende Baum des Maquis. Die Kermes-Eiche wird häufig von einem Insekt parasitiert, das Kermes vermilio genannt wird. Kermes ist ein roter Farbstoff, der aus den getrockneten Körpern der Weibchen dieses Insekts gewonnen wird. Die Kermes-Insekten sind im Mittelmeerraum heimisch und sind Parasiten, die von dem Saft der Wirtspflanze leben. Sie wurden von den alten Griechen und Römern als roter Farbstoff verwendet. Der Kermesfarbstoff ist ein reiches Rot, ein Karmin. Er hat eine gute Lichtbeständigkeit auf Seide und Wolle. Im Mittelalter wurde er sehr geschätzt zum Färben von Seide und Wolle, insbesondere für scharlachrote Stoffe.
