Op de Markt van Biervliet tref je het standbeeld van de belangrijkste figuur uit de geschiedenis van Biervliet aan: Willem Beukelszoon, die in 1397 het haringkaken bedacht, een speciale manier om de vis schoon te maken. Bij het kaken worden met een speciaal mesje de kieuwen en de ingewanden van de haring verwijderd, op de alvleesklier na. De enzymen van de alvleeskier laten de haring 'rijpen'.
