Der junge Mann aus Figeac, der seine Sporen im Louis XV in Monaco und im Belles Rives in Juan-les-Pins abverdient hatte, ist damit der würdige Nachfolger von Alexis Pélissou. Seine Grattons vom Bauerngeflügel mit karamellisierten Zwiebeln oder sein Lammrücken mit Bohnenkraut und zartschmelzender Aubergine sind der Beweis dafür, ebenso wie natürlich seine Trüffelgerichte.
