Verkauf von Pizzen zum Mitnehmen, handwerklich hergestellt, auf Holzfeuer gebacken. Mein Pizzateig wird hausgemacht auf Sauerteig mit Reifung für bessere Aromen. Er wird mit lokalem Bio-Mehl aus der Moulin du Courneau nördlich von Bordeaux in Laruscade hergestellt und von Hand ausgerollt, damit er sehr luftig, weich und knusprig wird. Der Großteil meiner Rohstoffe sind frische Produkte. Ein Teil davon stammt von lokalen Unternehmen, wie z. B. :
Entenbrust, Foie Gras, Räucherlachs: Maison Delpeyrat und Labeyrie.
Pilze: Champiland in Herm.
Honig: Alain LABAT, Imker in Castets.
Zapfstellen: AB Metzgerei Saint-Paul-lès-Dax .
Spargel (in der Saison): Copadax in Castets.
