Il mercato si trova nell'edificio costruito sull'ex convento di San Francisco, acquisito dallo Stato dopo la confisca di Mendizabal.
La prima pietra fu posta il 29 giugno 1873 . È uno dei mercati alimentari più antichi della provincia di Cadice.
Le facciate sono in pietra e decorate con ceramiche smaltate su cui è disegnato il traforo utilizzato nella costruzione.
Gli ingressi e i cancelli principali hanno ancora le inferriate originali in ferro e si accede all'ingresso principale da Calle Parada y Barreto tramite una bellissima passerella fiancheggiata da aranci.
Il Mercado Central de Abastos è diviso principalmente in tre aree: carne, pesce e frutta e verdura.
L'interno dell'edificio ospita attualmente 115 stalli.
De Markt dispone di quattro celle frigo nelle cantine , dove possono essere conservati i prodotti deperibili dei commercianti.
