Ulstrup Slot er en herregård beliggende i den lille by Ulstrup, 20 kilometer sydvest for Randers, i den vestlige del af Danmark.
Ulstrup Slots historie kan spores tilbage til slutningen af det 14. århundrede, da det blev ejet af Jens Brandsen. Senere ejere inkluderer dronning Margrethe I, men det oprindelige hus forsvandt senere, og Ulstrup fortsatte med at eksistere som en landsby. Det blev erhvervet af gehejmestatsråd Christen Skeel i 1579 og nedlagt for at give plads til hans nye herregård, som blev bygget i 1591. Bygningen blev udvidet mellem 1615 og 1617 af hans søn, Jørgen Skeel, og en landbrugsbygning blev bygget i 1668.
