Ten tijde van Hildegard was Bingen niet alleen van wijngaarden omgeven maar groeiden er wijnstokken op vele plekken in de stad zoals nu noch op de Kloppberg. Ook Hildegards klooster op de Rupertsberg was van wijngaarden omgeven. De zusters hadden ook wijngaarden in Rheinhessen en de Pfalz. In de voeding speelde de wijn een belangrijke rol omdat hij anders dan het water niet door bacteriën vervuild was en beschouwd werd als vitamineleverancier. Hildegard schreef over de de heilzame werking van wijn als volgt:
„Der Weinstock hat feurige
Wärme, und jenes Feuer ist
so stark, dass es seinem Saft
einen Geschmack verleiht, der
verschieden ist von dem anderer
Kräuter. Der Wein macht das Blut
des Trinkers gut und gesund.“
