Deze jongeman uit Figeac, die zijn opleiding genoot aan de Louis XV in Monaco en vervolgens aan de Belles Rives in Juan-les-Pins, heeft zich opgeworpen als de waardige opvolger van Alexis Pélissou. Zijn grattons van gevogelte met gekarameliseerde uien of zijn lamsrug met hartige en smeltende aubergine zijn hiervan het bewijs, evenals natuurlijk zijn gerechten op basis van truffel.
