Navnet "Falstaff" refererer til den navngivne figur i William Shakespeares arbejde John Falstaff. Shakespeare lader ham optræde i værkerne "Henry V" og "The Merry Wives of Windsor". Det er en løsslupen person, der elsker vin. Derfor forbindelsen til denne virksomhed, som oprindeligt var ment som vinbar. Også Orson Welles bruger denne figur i sin navngivne film. Stilen fra Horta kan ikke benægtes i denne unikke brasserie. Årsagen er, at møbelsnedkeren og indretningsarkitekten Houbion, som arbejdede for baron Horta på det tidspunkt, indrettede bygningen i begyndelsen af det 20. århundrede. Portrættet af Falstaff kan stadig ses i et brandvindue i caféen. I oktober 2000 blev Falstaff klassificeret af den kongelige kommission for monumenter og landskaber.
