Joseph Colyn begyndte i 1983 med produktionen af Herve-ost, sammen med sin hustru Simone. Nu
producerer de sammen med deres to sønner Stéphane og Jean-Christophe årligt omkring 20.000 stykker milde eller krydrede Herve-ost, men også smør og andre mejeriprodukter. Familiebaggrunden? En blød ost og vasket skorpeost, modnet på gården i 4 til 6 uger.

vvv-kontoret i Herve-land og via to grossister, Real (i Battice) og Camal (i Barchon)
