Joseph Colyn iniziò nel 1983 la produzione di formaggio Herve, insieme a sua moglie Simone. Ora
producono insieme ai loro due figli Stéphane e Jean-Christophe circa 20.000 forme di formaggio Herve dolce o piccante all'anno, ma anche burro e altri prodotti lattiero-caseari. L'orgoglio della famiglia? Un formaggio morbido e un formaggio a crosta lavata, stagionato in fattoria per 4-6 settimane.

Vendite: sul posto, da mercoledì a venerdì dalle 9 alle 17, e il sabato dalle 9 alle 12:30, presso l'ufficio turistico della Terra di Herve e tramite due grossisti, Real (a Battice) e Camal (a Barchon)
