Elbschloss Bryggeriet blev grundlagt i 1881 i det preussiske Nienstedten og var den eneste betydelige industrivirksomhed i denne by. Det blev bygget på dele af det tidligere parkareal, der tilhørte det klassicistiske landhus Baur, som blev opført af Christian Frederik Hansen mellem 1804-1806. Landhuset Baur blev uofficielt kaldt "Elbschlösschen", hvilket gav navn til bryggeriet.
Den mest kendte mærke fra dette bryggeri var Ratsherrn Pils, som blev brygget i 1978 i størrelsesordenen 150.000 hektoliter. Derudover blev det mørke pils Dübelsbrücker Dunkel, der blev skabt i 1988, brygget, en henvisning til den nærliggende Teufelsbrück.
